Corn Salad
This mouthwatering fusion of sweet corn kernels and creamy avocado slices creates a perfect harmony of flavors and textures that will leave your taste buds craving for more.
INGREDIENTS
- 3 cobs fresh summer corn, raw and removed from the rib
- 1 large tomato, chopped
- 1/4 Cup red onion, chopped
- handful of sliced scallions
- handful diced fresh garlic
- 1 avocado, diced
- 1 heaping teaspoon pesto (homemade if possible)
- dash of olive oil, a couple squeezes of lemon and salt/pepper to taste
- Combine everything together and mix. Drizzle Della Terra extra virgin olive oil and serve. You could also crumble feta and spread on top.
